Zucchini Recipes

Aren't these zucchini blossoms lovely?
Within 4 days the zucchini was the perfect size!

Hello gardeners! Do you have zucchinis coming out of your ears? Not quite sure how to use up all that wonderful tastiness. Rachel Child has shared some recipes with notes so that your zucchini will not go to waste.

Zucchini Angel Hair Pancake
Baked Ziti Summer Veggies - I don't like fresh tomatoes, so I used a drained can on diced
Chicken Rice Casserole - good
Herb Marinated Grilled Vegetables - I just used zucchini and yellow squash & decreased the marinade by half
Grilled Yellow Squash with Oregano  - simple and good
Grilled Zucchini Caprese Sandwiches
Grilled Zucchini with Garlic & Lemon Butter - favorite grilled squash recipe ever
Penne with Zucchini Pistou
Squash Bacon Mozzarella Quiche
Summer Squash Corn Chowder  - good
Summer Corn Chowder with Bacon - fantastically amazing, just make sure you get good bacon, or the yucky fat from the yucky bacon 100% ruins it

With the 3 I harvested, I'm thinking of making Zucchini Parmesan, replacing the eggplant in our recipe
Beef with Cabbage and Carrots - use zucchini or any other veggie you'd stir fry.
